Gluten Free Protein Packed Pancakes

This protein pancake recipe is fantastic for those who are gluten sensitive or who are just trying to wean out wheat and looking for alternative flour substitutes.

This recipe has a combination of two flours: Quinoa and Spelt. I use both because I experiment quite a bit when cooking and when I used one flour alone, the consistency didn’t seem to hold well. So, I switch up between these two and may add Almond flour.

-1/2 c. Quinoa flour
-1/2 c. Spelt flour
-1/8 tsp. of non-aluminum baking powder
-1/4 tsp. of baking soda
-one egg (or sub egg white)
-1/8 tsp. of ground cinnamon
-1 tsp. of Maca powder
-1 scoop of your fav protein powder
-3/4 c. of Vanilla Almond Milk

** (optional) Mix in any of the following: bananas, blueberries, nuts, cloves. Also, instead of using a syrup, try topping with strawberries!!! Or, prepare your own syrup!

Blueberry Syrup Recipe:
Fresh or Frozen Organic Blueberries, about one cup. Add 1/4 c of water and sweeten with Raw Sugar or Stevia, just a 1/4 tsp. On the stovetop: Heat over Med temp. In Microwave: heat for 30 seconds at a time till desired consistency is met.

Mix and enjoy!!!!

I love pancakes! I’m from the Midwest and really enjoy food!!! However, because I live a healthy lifestyle, I have found ways to modify many dense, rich comfort foods and evolve them into calorie conscious enjoyable foods without losing ANY flavor!! More recipes to come!!!
