It is that time of the year that we all start to see large amounts of pumpkins all over the place. Don’t just use them for decoration, put the whole thing to use and consume the meat and seeds. It contains vitamin A and antioxidant carotenoids, particularly alpha and beta-carotenes, it’s a good source of vitamins C, K, and E, and lots of minerals, including magnesium, potassium, iron, leutin and xanthin. It is one of the very low calorie vegetables. Dietitians have recommended adding pumpkin to diets to help in cholesterol controlling and weight reduction. Pumpkin is a good source of B-complex group of vitamins like folates, niacin, vitamin B-6 (pyridoxine), thiamin and pantothenic acid. Pumpkin Seeds are worth consuming also they are loaded with minerals, seem to have an anti-inflammatory effect, and may even help protect against prostate cancer and osteoporosis.
