The other day I ran out of spinach, the typical base to my salads. Rather than run to the market or change my meal idea, I simply did a salad without the greens. It was delicious. This salad has baked salmon. You can use turkey or whatever protein you prefer. I then chop up jalapeno, yellow onion, carrot, broccoli, tomato, celery and a red bell pepper. All organic. Then I toss with some balsamic vinaigrette and you’re done. This is a super tasty meal that for some reason gets my taste buds jonesin’ when you leave out the leafs.
